A note about hot pepper heat units: The measure of Capsaicin was developed by Wilbur Scoville in 1912. Scoville Heat Units (SHU) is a subjective scale and should be used only as a guide. Cool weather produces milder peppers and high night time temperatures has the greatest effect on increasing the heat in peppers. Also, red chili peppers are generally milder that their green counterparts. Drying also increases the heat by 10 times or more.
